Market Update From the West Coast Meatheads

Beef

Striploins and Short loins have quickly reached new all-time highs. Most packers at the end of the week are asking high $9’s and some $10 for a Choice 0x1 Striploin…which is incredible. This dramatic increase in strip prices have caused a renewed interest in the Rib which are keeping these prices steady for the moment. Chuck Flap, chuck tenders, rounds cuts, and 3bn short ribs are all great values currently. Not surprising but packers have slowed down on selling $8 Sirloin Flap and the next move on prices will be lower.

Chicken

All cuts are steady into next week.

Pork

Live hog cost continues to rise. This has driven cost of bellies, bacon, butts, loins up 10-40 cents/lb. this trend looks like it will continue.

Lamb

Domestic prices and availability are steady. All cuts have held steady for several weeks. aus lamb racks dropped slightly over the past couple weeks and n.z. racks are steady.

Veal

Our suppliers anticipate prices and availability being steady for the next couple months.

Shrimp

Foreign product and Mexican farmed products have been steady to slightly down in the past couple weeks. Large Mexican wild shrimp short supply and high in price.
